As you know she is working now, getting off at 5. Its hard to come home and get dinner going.. SO. lets surprise her and send some quick recipes and meal ideas! If you don't have a quick dinner idea, then send her a little encouragement to her as she enters back in the work force...

get up in the morning, throw 4 chicken breasts or 3 or 5 whatever into the crock pot with a bottle of salsa. when you get home shred it up with a fork- throw the tender moist chicken meat into a taco shell either already or fry a corn tortilla up in some butter or oil...there you go. have a kid chop up some tomatoes and lettuce...top with cheese and sour cream. serve with watermelon or corn on the cob.
you can do the same thing with the chicken expect instead of salsa add barbecue sauce for a completely different meal...add onto rolls for a barbaque chicken sandwich.

shaila...one of my favorite crock pot meals is to throw a pork roast in the pot in the morning... you can make a dozen meals out of that. You can use McCormick Seasoning on it and for leftovers do barbeque or make soft tacos or just freeze it in small containers for another day. Since there are only 3 of you now you should have leftovers. I love the "pulled" pork with barbeque sauce on a bun. Hope the job is going well.
One of our favorites is to cut up chicken breasts into pieces and marinate in Yoshida sauce either overnight or in the morning and then for dinner put the pieces on skewers and throw them on the bbq. Then I cook some rice and stir in a little Yoshida sauce. It also freezes well. I just put the chicken pieces in the sauce and throw it in the freezer. Then when I need it--just thaw and cook.
On-the-Go Chicken Tacos
Buy a rotissere chicken on your way home from work. Buy taco shells, salsa and a ripe avocado.
Shred chicken. Add 1 cup salsa and diced avocado. Mix together. Put in taco shells. Top with cheese and sour cream if you aren't counting calories!
Sorry, but my favorite quick dinner is breakfast. When I don't have anything thawed or planned I can always make breakfast! Luckily Greg likes it. But, you are a big breakfast maker, so it might not go over well at your house.
Or I do a stir fry with my veggies and some chicken, it is low calorie too.
Too funny!!!!!!!!!! Lately I love fajitas...just fry chicken and peppers and put it in tortillas with sour cream and salsa. SO easy! Good luck returning to the work force!!!
Tilapia! You can get it in a bag, individually frozen so take out what you need. It's a really mild fish so you can season it as you want...or...women's bean project soups - they are the best and can be crock-potted....orrrrrr tostadas - taco salads - delivery oops, did I say delivery. Well, it's fast and easy :-)

I agree the crock pot is our best friend when it comes to an easy meal, all ready prepared when you walk through the door. Especially whe you use the through away crock liners found by the foil in the grocery store.
Also a fast one is foil dinners.
A breast of chicken works great or what ever kind of meat you have with potaoes cut in wedges, onions, carrots or whatever else you desire...season and pour BBQ sauce over and plop in the oven. Eat out of the foil and then through it away for no clean up!

I love making pasta. Clams, onions mushrooms, spinach and garlic with a jar of alfredo sauce poured over pasta. Nice easy salad with french bread. Easy.
Pam is SO funny. I am missing her around blogland.
