Update

Unfortunately, our football team lost last night... so, today we are cheering for our other "Cougar" team!!! Go BYU!!! (It is Homecoming for them today!!!)

And, I thought I would just post Brittany's Pumpkin Bread recipe. I know you probably already have recipes for pumpkin bread but I think the fact that it calls for pudding in the recipe it makes it really moist and yummmy!!! It is finally cooling down here and so I am in the mood for fall... pumpkin bread will make my house smell good and my tummy feel good, so, I am headed to the kitchen!

1 1/3 c. Veg. Oil
5 Eggs
1 Can of Pumpkin (16 oz)
2 c. Flour
1 c. Sugar
1 c. Brown Sugar
1 t. Salt
1 t. Cinnamon
1 t. Nutmeg
1 t. Baking Soda
2 pkg. Instant Vanilla Pudding (dry)
Chocolate Chips! (Optional: nuts)

Directions: Grease 2 loaf pans. Mix oil, eggs and pumpkin in mixing bowl and beat well. In a separate bowl sift together flour, sugar, salt, cinnamon, nutmeg, and baking soda. Add to pumpkin mixture and mix till blended. Stir in pudding mix and chocolate chips (or 1 c. nuts if you like) Bake at 350° for 1 hour. Enjoy!

Oh I'm so bummed that I can't see the game. Well I could but I'd have to pay $29.95 for the priviledge...heck I'm almost tempted to buy the stupid thing. We used to get them for free on our satelite...but those days are gone. GOOOOO COUGARS!!!

Boy that sounds yummy. I would make this recipe but I made banana bread this week ate half the loaf. I have no self control when it comes to any kind of bread. :-(

I made this bread this morning, and Luvpilot and I are eating it for lunch. It's the best ever! I'm so glad you shared it. I used to buy some like it from a bakery when I lived in UT, and haven't been able to duplicate it until now! Which is not good for my diet, but I'll just spend a little extra time on the treadmill.

Have you ever made this using the small bread pans? I'm just wondering how long to bake it for. I want to take it to my VT ladies next month.
